Wash and dry all produce.

Heat @cooking oil{1%tbsp} in a #medium pot{} over medium-high heat. Add @onion{½%unit} and @long green pepper{1%unit}; cook, stirring occasionally, until browned and softened ~{5%minutes}.

Stir in @three-bean blend{15%oz} with their liquid, half the @tex-mex paste{2%tbsp}, half the @veggie stock concentrate{1%unit}, @southwest spice blend{1%tbsp}, @water{½%cup}, @crushed tomatoes{14%oz}, and @shrimp{8%oz}. Season with @salt{1%pinch} and @black pepper{1%pinch}. Bring to a simmer and cook until shrimp are pink and opaque ~{5%minutes}.

Divide chili between bowls and dollop with @sour cream{2%tbsp}. Sprinkle with @cheddar cheese{¼%cup} and @cilantro{2%tbsp}. Serve with @blue corn tortilla chips{½%cup} on the side for dipping.
